Maybe I made a version of one of your stables below. I prepared all the food in this post over the past few months and they all tasted amazing! I will definitely make all of them again, if I haven’t already!
Mexican Cooking TipsĀ The Calories: Mexican food can be very high in fat and sodium. Therefore, go light on the salt, cheese, avocado/guacamole (contains good fat, but can increase your calorie intake quickly so use in moderation) and replace creme cheese and sour creamĀ with 0% plain greek yogurt. Also, use whole grain tortillas instead of corn tortillas for additional dietary fiber. Refer to a previous blog post with more ways to make healthier mexican food.
Cuban Black Bean Soup
Way back in February I made this soup for a Monday night Bachelor viewing. I got two thumbs up from me friends! It was delicious, as the cuban spiced vegetable puree added to the black beans givee the soup an extra punch of flavor!

This was my first time making cornbread. I was always intrigued to make cornbread less sweet by giving it a kick with chopped jalapeƱo and less sugar. I didn’t have buttermilk on hand, which most cornbread recipesĀ call for, so I made a buttermilk substitute.
Homemade ButtermilkĀ =1 c. sour milk = 3/4 c. skim milk + 1/4 c. lemon juice + let mixture sit for 5 min
JalapeƱo cornbread is the perfect addition to the cuban black bean soup (featured above) instead dipping tortilla chips.

These enchiladas were another first for me! I always make fajitas/soft tacos and taco-less mexican salads for my Mexican cravings, but for some reason I have never made enchiladas, which are just as easy to make, if not easier!
This recipe is a low-fat version of enchiladas, as I used 0% plain greek yogurt instead the high fat and calories from sour cream, creme cheese, and loads of cheese to create the creamy filling. Also, I sprinkled just enough mexican style shredded cheese to cover each enchilada and I added a dollop of greek yogurt for the final finish.

I have made these homemade tortilla chips many many times! They are just as good as the tortilla chips at any authentic Mexican restaurant. All you need is soft tortillas (whole wheat or corn), olive oil to spray or brush on the cut tortillas, and a sprinkle of salt! Bake on 350 degrees F for 10 mins. Check every 5 min, as ovens can vary from home to home. You don’t want to burn these!

Salsa Verde
All you need to do is toss sliced tomatillos (de-husked) and yellow onion in just enough olive oil to cover the tomatillos and onions. Spread the mixture on a baking sheet. Place the baking sheet in the oven on 350 degrees F and roast for 30 minutes, until tomatillos/onion are soft. Puree tomatillos and onion in a blender with 1/2-1 jalapeno (depends on how much of a kick you want to create in your salsa), and lime juice.

Lo-cal Margarita
You can’t forget a little bit of tequila on Cinco de Mayo!
My version of a skinny margarita!
