Black Bean Brownies

Gluten-free!

Ingredients:

Yield: 12 servings

  • 1-15 oz can of black beans, drained and rinsed
  • 3 egg whites
  • ½ cup of honey (or agave nectar)
  • ½ tsp of vanilla
  • ½ cup of unsweetened cocoa powder
  • ½ tsp of baking soda
  • ¼ tsp of salt
  • Optional: ½ cup of chocolate chips and/or nuts

Directions:

Pre-heat oven to 350 º F and grease a 9- inch x 12-inch pan. In a large bowl, mash the black beans with a large spoon/fork or with an emulsion blender. Add the egg whites, honey, vanilla to the black beans and mix well. Add the unsweetened cocoa powder, baking soda, and salt to the wet mixture and mix well. Mix in the optional ingredients. Pour brownie batter into the greased pan and bake brownies for 30 minutes.
