Spring & Summer Seasonal Crockpot Meal Series
Over the next few months, I will be making crockpot meals that will feature the seasonal foods and flavors of Spring and Summer. I am still not a crockpot master, as I only purchased my crockpot this past Fall. I hope this crockpot series will continue to improve my crockpot skills and provide me with a few more favorite go-to crockpot recipes. Check out my Fall Crockpot Meal Challenge!
Kicking off my Spring & Summer Seasonal Crockpot Meal Series with……
Cilantro Lime Chicken with Mango Coconut Mixed Vegetables
Cilantro and lime are my current favorite flavors to incorporate into my meals, especially as a part of my homemade meat marinades.
Ingredients
Yield: 6
- 4 chicken breasts (6 ounces each)
- Chicken Rub: 2 tsp chiptole pepper, 2 tsp cumin, 2 tsp chili powder
- 2 mango, chopped
- 1 yellow onion, sliced
- 2 bell peppers, sliced (yellow, orange, or red)
- 1 cups reduced sodium chicken broth
- 15 oz can diced tomatoes with green chiles or red salsa
- 15 oz lite coconut milk
- Juice from 2 limes
- 2-3 Tablespoons of all purpose flour
- Cilantro Lime Sauce:
- 2 cups cilantro, de-stemmed
- 3 cloves of garlic
- 1/2 small yellow onion
- 1 jalapeño, seeded
- 1/2 cup plan greek yogurt
- 2 tsp of chili powder
- 2 tsp of cumin
- Juice from one lime juice
Directions:
- Place the onions, bell peppers, mango, salsa, lite coconut milk, and chicken broth in the crockpot and mix together.
- Rub the raw chicken breasts with the chicken rub covering both sides of each chicken breast.
- Place chicken breasts on top the mixture already in the crockpot.
- Place all cilantro lime sauce ingredients into your food process or blender and blend ingredients together.
- Pour cilantro lime sauce on top of the chicken breasts.
- Cook the cilantro lime chicken for 4 hours on HIGH (8 hours on LOW)
- Remove chicken breasts and slice into slivers.
- Add the flour to the vegetables in the crockpot and stir well. Cook vegetables on HIGH for 15 minutes until mixture thickens.
- Optional: Cook a grain of your choice to add as a side to your meat and vegetables (brown rice, barley, or quinoa)
*Leftover chicken tastes great on salads and sandwiches!
